For the Baking Eggless Group Challenge, I chose Banana Muffins last month. The challenge is to substitute the egg in the recipe with some other ingredient, so that the taste and texture remains almost the same. Usually banana itself is used as an egg substitute. So may be the egg can be left out in the recipe. But the members of the group used various substitutes to get a fluffy, soft and moist muffins. Here are 12 variations of the eggless banana muffins recipe. Many recipes have chocolate chips which must have paired well with bananas. There is also an attempt to conceal the taste of banana with coconut flakes and coconut milk. All these experiments speak of success. We had a wonderful time with the preparation.
