Mexican Tortilla Pie

Today I am starting the second week of Blogging Marathon #31. I will be posting under Mexican Cuisine for the three days. To start with I made this Tortilla and Bean pie yesterday. Tortillas are flat breads made out of wheat flour and has an important role in Mexican Cuisine. They are used to make burritos, enchilladas and tacos. They are very similar to Indian rotis. I made a filling with paneer and red beans and layered the tortillas with the filling and cheddar cheese. This is then baked until the cheese layer was browned. When sliced and served it made a nice filling meal. I used paneer instead of minced meat and the combination of paneer and beans made a delicious filling. Usually a spring form pan is used but I used a loose bottomed cake tin. The tortillas are made to the size of the pan so that it becomes easy to arrange the pie.




Ingredients:
For two 5" Pies:
For The Tortillas:
Wheat Flour-1/2 cup
Salt-to taste
Oil-1 tbs

For The Filling:
Oil-2 tbs
Cooked Red Beans/ Rajma-1 1/2 cups
Paneer-200 gm
Salt-to taste
Onion-1
Garlic-1 pod
Tomatoes-3
Pepper Powder-1 tsp
Cumin Powder-1 tsp
Green Chilly-1
Coriander Leaves-4-5 tbs

Cheddar Cheese-200 gm
Coriander Leaves- For Garnish

Procedure:
For The Tortillas:
1. Mix together flour, salt and oil.
2. Add water little by little and make a soft dough.
3. Cover and set it aside for 15 minutes.
4. Divide it into 8 equal portions.
5. Roll each portion into a disc.
6. Cut the disc to the size of the base plate of the tin.
7. Heat a tawa and cook the tortilla on both sides until small brown spots appear.
8. Remove from flame and keep it aside.
9. Finish off the remaining tortillas.

For The Filling:
1. Heat oil and add onion and green chilly.
2. When brown, add the chopped tomatoes.
3. Stir until the tomatoes are cooked.
4. Add the crumbled paneer and saute for 2 minutes.
5. Add the cooked beans, salt, pepper powder, cumin powder and coriander leaves.
6. Cook for a minute and remove from flame.
7. Allow it to cool completely.

Arranging The Pie:
1. Preheat oven to 175C.
2. Grease two 5" loose bottomed pan.
3. Place a tortilla on the bottom.
4. Spread a layer of filling and grated cheese.
5. Place another tortilla and fill it again. 
6. Repeat two more layers.
7. Repeat this same layering for the other pan also.
8. Place the pans in the oven and bake for 15-20 minutes or until the cheese is golden in colour.
9. Remove from oven.
10. Run a knife along the sides.
11. Remove the pie from the pan, garnish with coriander leaves and serve it hot.




Prepare the filling.




Roll out the tortillas and trim to the size of the tin.




Cook until brown spots appear.




Place a tortilla at the bottom.




Layer it with filling and grated cheese.




Repeat three more layers and bake.




When done remove from the pan.




Slice it up and serve..
