Kesar Badam Burfi

I haven't tasted this burfi before. When a friend of mine has asked about this sweet which is available in Bangalore, I started browsing for recipes. There was a single recipe in various food sites and so I bookmarked that recipe. I tried it yesterday. As there was milk in the recipe, it came out so soft. But I don't know whether I can call it burfi. This is a super rich sweet with almonds, saffron and condensed milk. It tastes so delicious and is perfect for festivals. Today I am celebrating my birthday and this is a visual treat to all my friends out there. 



Recipe Adapted From Food- Sulekha
Ingredients:
Almonds-2 cups/ 300 gm
Milk-2 1/2 cups
Sugar-1/3 cup
Condensed Milk- 400 gm/ 1 tin
Saffron Strands-1/2 tsp
Cardamom Powder-1 tsp
Ghee-1 cup
Yellow Food Colour - a few drops
Slivered almonds and Pistachios For Garnish

Procedure:
1. Blanch and peel almonds.
2. Soak the peeled almonds in milk for 30 minutes.
3. Grind it in mixer grinder to make a smooth paste.
4. In a heavy bottomed pan take the paste and heat it.
5. Add condensed milk and mix well.
6. Soak a pinch of saffron strands in 2 tbs warm milk for 10 minutes.
7. Add this to the almond mixture. Add food colour, cardamom powder and sugar
8. Keep on stirring until the mixture starts thickening.
9. Add ghee 2 tbs at a time and keep on stirring. Add all the ghee and stir.
10. When the mixture starts to leave the sides of the pan, pour into a greased tin.
11. Smooth the surface and garnish with slivered almonds, pistas and remaining saffron strands.
12. Allow it to cool completely.
13. Refrigerate the mixture for 30 minutes.
14. Slice it up into squares.
15. Transfer the squares to a box.
16. Serve and enjoy!!


Grind almonds to a fine paste.



Soak saffron strands in warm milk.




Add it to the badam along with the other ingredients.



Keep on cooking until it leaves the sides.



Pour into a tin and garnish with almonds, pistas and saffron strands.



Slice it up.
