I bought a new book about cookies. It is a tamil book and there were lots and lots of recipes for cookies. I had a box of dates to be used and so I tried out this recipe which uses dates. The cookies were crispy and crunchy and delicious with dates flavour. I took it to Theni and shared it with FIL and SIL. My niece and nephew also liked these cookies. My daughter was not so keen but PK lied it very much.
Yields 50-60cookies
Ingredients:
Wheat Flour-100gm
Maida/ White Flour-200gm
Granulated Sugar-150gm
Butter-150gm
Milk-3-5tbs
Dates-90gm
For Topping:
Milk-1/4cup
Poppy Seeds/ Khus Khus-2-3tbs
Procedure:
- Powder
the sugar in a mixer grinder.
- Mix
maida and wheat flour in a bowl.
- In
another bowl cream butter and powdered sugar together.
- Add
2tbs of milk and chopped dates and beat until creamy.
- Add
the flour and mix well.
- Add
milk if necessary to get a clumpy dough. It should not be smooth and
elastic. It has to be crumbly and when you hold the dough in your palm, it
must clump together.
- Divide
into 2 parts.
- Roll
out each portion into a circle of 1/8” thickness.
- Cut
into squares with a pastry cutter.
- Gently
remove it from the counter with the help of a spatula.
- Place
on a lined baking tray.
- Brush
the top of cookies with milk and sprinkle poppy seeds on top.
- Preheat
oven to 160C.
- Bake
the cookies for 10-12minutes or until golden.
- Remove
from oven and place the cookies on a wire rack.
- They
will be soft when hot but will become crispy and crunchy when cooled down.
- Serve
along with a cup of hot coffee or tea.
Cream butter and sugar along with dates and milk.
Add flour and milk if needed to make a clumpy dough.
Roll into a thin rectangle and cut into squares with a pastry cutter.
Arrange on lined tray, brush with milk, sprinkle poppy seeds and bake.
Cool on wire rack.
