Eggless Banana Muffin- Round Up

For the Baking Eggless Group Challenge, I chose Banana Muffins last month. The challenge is to substitute the egg in the recipe with some other ingredient, so that the taste and texture remains almost the same. Usually banana itself is used as an egg substitute. So may be the egg can be left out in the recipe. But the members of the group used various substitutes to get a fluffy, soft and moist muffins. Here is the round up of the recipes tried and tasted by the members of the group.

2. Renuka of Pinch Of Salt: Banana Chocolate Chip Muffins

3. Hema of Aromatic Cooking: Eggless Banana Muffin

4. Jayanthi of Sizzling Veggies: Coconut Banana Muffins

5. Harini-Jaya of Tamalapaku: Vegan Banana Muffins

6. Priya Suresh of Priya's Versatile Recipes: Eggless Sugarless Walnut Banana Whole Wheat Muffins

7. Priya Kumar of Culinary Chronicles: Eggless Banana Muffins

8. Priya of Enveetu Kitchen: Eggless Banana Muffins

9. Suma of Veggie Platter: Eggless Banana-Chocolate Chip Muffin

10. Chitra of Chitranna: Eggless Banana Muffins

12. Gayathri Kumar of Gayathri's Cook Spot: Eggless Banana Muffins

Here are 12 variations of the eggless banana muffins recipe. Many recipes have chocolate chips which must have paired well with bananas. There is also an attempt to conceal the taste of banana with coconut flakes and coconut milk. All these experiments speak of success. We had a wonderful time with the preparation. Stay tuned in to this space for more challenges. If you are ever interested in Eggless Baking, please mail me to gayathriraani@gmail.com with details of your blog for joining the group.
