Chiroti

Today is the second day of Blogging Marathon#9. I am doing festival foods of India with step by step illustrations. For this day I planned on preparing chiroti. Chiroti is a special sweet from Karnataka. Actually, chiroti is prepared with chiroti rava. It is a very fine quality of rava. As I don't get chiroti rava at Madurai, I used maida instead. As I went through many posts on chiroti, they mentioned that, it can be prepared in two ways. Sprinkling powdered sugar on top of hot chiroti is one method and the in the other method, chiroti is dipped in sugar syrup. As we all have sweet tooth, I preferred to dip the chiroti in sugar syrup instead of sprinkling sugar on top. The sugar sprinkled chiroti can be served along with badam milk. In a marriage I attended in Mysore, they served chiroti and badam milk as the dessert. The preparation is quite interesting and I loved working on it. The chiroti was so crisp and when you take a bite, the syrup oozes out. It was so delicious and we enjoyed it a lot. 



Ingredients:
Maida-1cup
Rice Flour-1tbs
Ghee-1 1/2tbs
Milk-1/4cup
Melted Ghee-1/8cup
Sugar-1 1/2cups
Cardamom Powder-1/2tsp
Oil-To deep fry

Procedure:
1. Add melted ghee to maida and mix well.
2. Add the milk and mix well.
3. Add enough water to make a soft dough.
4. Knead the dough for 5 minutes until smooth and elastic.
5. Divide it into 10 equal balls.
6. Cream together rice flour and ghee. Beat it until fluffy.
7. Add 1cup of water to the sugar and prepare a sticky syrup. Add cardamom powder for flavour.
8. Roll out five balls into thin equal sized discs.
9. Apply the rice paste evenly on one disc and place another disc on top. Apply the paste on the second disc and place a third disc on top. Like wise, layer 5 discs with the paste in between.
10. Start rolling it tightly from one end to form a log.
11. Finish with the second batch.
12. Heat oil.
13. Cut each log into seven or eight equal parts. Roll each part into a thin disc.
14. Fry both side until golden brown.
15. Remove from oil and drop into syrup. As the chiroti is hot, it will absorb the syrup fast. 
16. Just flip it inside the syrup. Remove from syrup and place on a plate to cool.
17. Finish with the remaining chirotis. 
18. Serve it on festivals...

Add melted ghee to maida

Add milk and water to prepare a soft dough

Cream ghee and rice flour together

Divide into 10 balls

Roll out a ball and apply the paste on it

Place the other disc on top

Place five layers of the discs

Roll into a log

Cut into 7/8 equal parts

Roll it into a disc

Fry in oil

Dip in syrup

Allow it to dry

Serve
