Marbled Idli

When Satya announced her event, I wanted to try this technique. I have seen this in cakes, but for idlis, I was not sure of the outcome. I didn't want to use only food colours. So I decided upon beetroot and carrot along with a few drops of food colour. The first idli I prepared was not fully cooked and so when I removed it from the mould, it was mushy and it lost its shape. So the next try was with aluminium foil lined mould. The result was great. I have included step by step pictures. My daughter loves those flowery pattern on the idli. So I didn't have to try hard to make her eat idli. It is also a healthy version of our regular idli. Ingredients:

Boiled Rice-1cup
Urad dhal-1/4cup
Food Colours-Red and Orange
Beetroot-1
Carrot-1

Procedure:
  1. Soak rice for 8-10hours.
  2.  Soak dhal for 30 minutes.
  3. In a wet grinder, grind the dhal till it is smooth and has so many air bubbles.( the more you grind dhal, the softer the idlis)
  4. Transfer it to a container. Add rice to the grinder and grind it till done.
  5. Add this rice batter to the dhal batter.
  6. Add salt and mix it thoroughly.
  7. Let it ferment over night.
  8. Extract juice from carrot and beetroot.
  9. Take 1cup of fermented batter and add the carrot juice and a few drops of orange food colour. The batter should be little thin than the original idli batter.
  10. Mix another cup of batter with beetroot juice and pink food colour.
  11. Take white batter and mix little water to bring it to required consistency.
  12. Grease a cake tin. Cover it completely with foil. Grease it.
  13. Take 1tbs white batter and pour it in the centre.
  14. Take a tbs orange batter and pour it in the centre. The orange batter will push the white batter outside.
  15. Repeat the three colours until the first ring reaches the outer edge of the tin.
  16. With a tooth pick draw a line from the centre towards the outer edge.
  17. Draw 8 lines in this manner.
  18.  Now draw lines from outer edge to the centre. This will create a flower pattern.
  19. Steam cook the idli till a tooth pick inserted comes out clean.
  20. Remove from steam and allow it to cool completely.
  21. Remove from the foil, and serve with sambar and chutney.
  22. A very easy method of marbling is also shown.
  23. Add table spoon full batter of various colours in a greased tin.
  24. With a tooth pick draw some designs to mix the colours.
  25. Steam cook and serve.
