I prepared these mini pink pooris for my daughter. This is one of the method to induce veggies into my daughter's diet. She liked the pooris very much. For my surprise she took those pooris in her lunch box also.
Ingredients:
Maida-1cup
Atta-1cup
Beetroot-2
Salt-to taste
Procedure:
- Scrape the skin of beetroot and grate it.
- In a mixer grinder, grind it to a fine paste adding 1/2 cup of water.
- Remove juice using a strainer.
- Mix atta, maida, salt and the beetroot juice to prepare a firm dough.
- If the juice is not enough add little water.
- Prepare small balls out of the dough.
- Roll it to a circle of even thickness.
- Deep fry in oil.
- Serve hot.
A nice cauliflower masala to go with those cute pooris.
Ingredients:
Cauliflower-1
Tomato-3
Onion-2
Ginger- a small piece
Garlic-5pods
Chilly powder-1tsp
Coriander powder-1tsp
Garam masala-1/2tsp
Fennel seeds-1tsp
Salt- to taste
Turmeric powder-1/2tsp
Procedure:
- Cut cauliflower into small florets and boil it for 5 minutes in water. Strain water and keep the cauliflower pieces aside.
- In a pan heat 2tsp oil and add ginger and garlic. Saute till golden.
- Add onions and sauté till translucent.
- Add tomatoes and cook till the raw smell is gone.
- Grind this mixture to a fine paste.
- In a pan heat 2tbs oil and add fennel. When splutters add the paste.
- Add red chilly, garam masala, turmeric and coriander powders.
- Add salt to taste and let it cook for 5minutes on low flame.
- Add the cauliflower pieces and a little water required to get the gravy consistency.
- Let it cook for 2 minutes.
- Switch off flame and add the cilantro.
- Serve hot with roti, chapathi, naan or poori.
