Oats Cookies Cheese Cake (Eggless)

Yesterday I had promised to post the recipe by which I turned those hard biscuits into a tasty cake. My sister came home the day I prepared this cake. She liked it very much. We finished it within one day. It was such a nice cake.



Ingredients:

For the Cookies Layer:
 Flour-175gm
Malt Drink Powder-25gm( I used Boost)
Oats-50gm
Cut fruits-50gm
Butter-75gm
Jaggery / Palm Sugar-100gm
Golden Syrup-2tbs
Baking Powder-1tsp


For the Cheese Filling:
 Ingredients:
Paneer-100
Sugar-20gm
Condensed Milk-1tbs
Juice and Zest of half lemon
Raisins -2tsp
Milk-1tbs
Flour-1/2tbs

For the Cake:
Milk-1 ½cups + 3tbs
Apple-1 (peeled, cored and thinly sliced)

Procedure:
1. Sift flour and baking powder.
2. Add oats,cut fruits, boost and mix well.
3. In a pan add butter, golden syrup and jaggery and heat it till the jaggery dissolves. 4. 4. Never allow this to boil.
5. Add this to the flour and mix with a wooden spoon to prepare the dough.
6. Make small balls and arrange them on a greased baking tray.. With a fork press the balls to flatten them.
7. Preheat oven to 200C. Bake the cookies for 12 minutes.
8. Remove from oven and let it cool for 5 minutes.
9. Remove the cookies from the tray and arrange them on a wire rack to cool.
10. In a mixie jar add cheese, sugar, milk, condensed milk, lemon juice and flour and grind to    a fine paste.
11. Take the paste in a bowl and mix in the lemon jest and raisins.
12. Ricotta filling is ready.
13. Grease a cake tin. Cut a butter paper to the size of base and line the tin with it. Grease the butter paper.
14. Boil milk and switch off stove.
15. Add the cookies and let it become soft.
16. Smash with a spoon and it should resemble chapathi dough.
17.If it is too dry add some more milk.
18. Transfer it to the cake tin and press it with a spoon to smoothen the top.
19. Add the paneer filling on top of the cookie layer.
20. Pour the 3tbs milk on top and slightly mix it with the spoon.
21. Arrange sliced apples on top.
22. Preheat oven to 200C.
23. Bake the cheese cake for 50minutes or till the apples are golden brown.
24. Remove from and allow it to cool.
25. With a knife loosen the sides and invert it on a plate.
26. Remove the butter paper and invert it again onto a serving plate.
27. Let it cool completely before serving.
