Colourful Boondhi

Wishing all my fellow bloggers and friends A VERY HAPPY DEEPAVALI.  This is a very simple recipe and takes very little time to prepare. Kids will love this because of the various colours. I will be posting only after two days. Have lots of work to do. So till then enjoy these colourful boondhis.

Ingredients:

Besan-1cup
Sugar-2cups
Water-1 1/2cups (for the syrup)
Cardamom powder-1tsp
Food Colour( Pink, Yellow, Green, Orange)- according to the colour needed
Oil- For frying

Procedure:

1. Mix Besan with water to form a batter of dosa batter consistency.
2. Divide the batter into 4 equal parts and add food colours and mix well.
3. Heat sugar and water and let it boil. Keep on stirring till it reaches one string consistency ( if you take the syrup between your thumb and index finger and pull the fingers slowly apart the syrup should form a string) Switch off flame and add cardamom powder.
4. Heat oil. Hold the boondi ladle on top of hot oil. Pour a ladle full of batter on the boondhi ladle. You can see drops of  batter falling into the oil which forms the boondhis. If the batter is too thin or too thick the boondhis will not be perfect balls.
5. Fry till done. Take out the boondhis and drop them into the sugar syrup.
6. When the boondhis are all done transfer the boondhis soaked in syrup to a large plate and allow to cool.
7. When cool the boondhis will get seperated.
8. Store in airtight container.

Wishing you all a very happy Deepavali
