Punjabi Special

Now I will be sharing with you my experiments on three Punjabi Dishes: Atta Pinni ( a sweet ball made out of ghee and atta), Amritsari Paneer (Grilled Paneer) and Punjabi Kulcha ( a flat bread made with maida and curd).
The experiment was a great success. All the dishes came out well. But it could make you feel heavy because of the generous use of ghee and oil. But for a special dinner it would be a perfect choice.I am sending this to FLAVOURS OF PUNJAB event hosted by Pari of Foodelicious and started by Nayna of Simply. Food.




Atta Pinni:



Ingredients:

Atta-1/2cup
Ghee-1/2cup
Sugar-1/2cup
Cardamom powder-1/2tsp
Pista-1tbs(finely chopped)

Procedure:

1. Heat ghee and add atta to it. 
2. Roast it till the atta is brown in colour and aromatic.
3. Add powdered sugar and stir it for 1minute. Stir it continuous because the sugar tends to stick to the bottom.
4. Add 1tbs milk and pista. Mix well and transfer it to a plate and let it cool.
5. Prepare small balls out of it. 
6. The balls may be a little loose but the next day it becomes firm.
7. You can also decorate it with a cashew on top.

Amritsari Paneer:

Ingredients:

Paneer-200gm
Besan-1/2cup
Red chilli powder-1/2tsp
Garam masala powder-1/4tsp
Ginger Paste-1/2tsp
Garlic paste-1/2tsp
Coriander leaves-finely chopped for garnishing
Salt-to taste
Turmeric powder-1/4tsp
Onion-Sliced very thin-1

Procedure:

1. Cut Paneer to 1"*1"*1" cubes.
2. Mix all the masala powder and pastes and salt to besan. Add water to form a thick paste.
3. Marinate paneer cubes in this paste for 1 hour.
4. On a greased baking tray arrange the paneer pcs and grill them till they turn golden brown.
5. Heat 1 tbs oil and add the onion rings and the remaining masala paste and stir. When the mixture becomes dry add the grilled paneer cubes and stir for a minute. Garnish with coriander leaves.
P.S: Next time when I prepare this I will be skipping the last part because I liked the grilled pcs very much.


Punjabi Kulcha:


Ingredients:

Maida-300gm (I used atta and maida in equal proportions)
Curd-200gm
Baking Soda-1/4tsp
Salt-to taste

Procedure:

1. Mix maida, salt and soda. Add curd and prepare a soft dough.
2. Knead it till smooth.
3. Keep it covered for 1hour
4. For onion Kulchas Roll out a small ball into a chapathi and stuff it with onions. Close the rolled dough over the onions and roll out the ball again to thin chapathis.
5. Cook it on tawa until done. Apply oil on both sides and serve hot.
6. I liked the plain version because it puffed out nice and was very soft. For the plain version roll the dough into thin circles and roast them on tawa. Do not add oil at the starting stage because it will not let the kulchas to puff.
